Tuscany cooking is simple. It values it raw material ingredients by broiling and dressing with olive oil and rosemary. Cold cuts appetisers are plentiful, Finocchiona, Prosciutto di cinta senese, Lardo di Colonnata, Salame toscano. With your stale Tuscan bread, Panzanella and Crostini. As first course we recomend Ribollita, Pappa col pomodoro, Zuppa di farro (Spelt Soup), Zuppa di lenticchie (Lentil Soup), Pappardelle alla lepre (hare sauce pasta), Pici all’aglione, Caciucco from Livorno. In main dishes we find a lot of meat, beef, pork, chicken. We have Beef Stake Fiorentina, Polpettone di manzo, Spit Sausages, Maiale ubriaco, Stracotto, Stuffed chicken. Seafood dishes are: Fiorentina Eel, Stoccafisso alla livornese, Triglie alla livornese and Octopus. Cheese is primarily Pecorino, Pecorino di Pienza, Pecorino delle Crete Senesi, and Marzolino del Chianti. The simple style of Tuscan cooking characterises its desserts too: Panforte, Cantuccini, Brigidini and Ricciarelli.

Officine Turistiche activities  in Tuscany

 

Ancient tuscan traditions: Tenuta Corsignano with Officine Turistiche


Fattoria di Corsignano is a 22-hectare estate set in the Chianti Classico Gallo Nero area. The farm is eco-friendly. All its products are organic. The cooking class is interactive and it lasts 3 hours. Each participant will prepare the entire meal. A visit of the farm and of the wine cellars will follow. Then there will be either lunch or dinner. Each dish will be accompanied by a wine produced by the farm with an explanation on pairing practices. Crostino ubriaco (literally a drunken open face toast), squash risotto with pecorino cheese, guinea-hen with Vin Santo, and pear and chocolate tart are some of the dishes to be prepared, selected according to seasonal availability.

Cooking class and lunch with local product
This is a great opportunity to get an insight about the delicacies of Tuscan cooking. After gathering fresh vegetables from the patch, we’ll learn the secrets about Tuscan dishes from our Chef. We’ll prepare handmade fresh pasta with flours ground in the farm’s windmill, a second course with a vegetable side order made with in-season organic vegetables , and lastly a dessert. At the end of class, participants will savor the prepared dishes paired with organic low-sulfite wines from the farm.

A day at an organic farm discover farming 
The day starts with a guided visit of the estate’s vineyards, focussing on the characteristic of different types of vineyards. There will also be a visit to the windmill with an introduction on extra virgin olive oilproduction  methods. Then a wine tasting and traditional Tuscan dishes. The pottery lab will offer the chance to take a class on decorative art. As an alternative it is possible to ride on horseback through the vines. Dinner will be served at the restaurant “Mulino a Vento”
