Basilicata Typical product

Basilicata cooking is based on simple traditional dishes. It echoes its harsh geographical traits as well as the tradition of nearby regions. Pork is quite a protagonist: sausage, capocollo, soppressata with fennel seeds and/or hot pepper. Among the many entreés we find Beans Lasagna, Orecchiette Lucana Style, dumplings and soups. Typical main dishes are Lamb with Mushrooms, Cazmarr (stewed lamb entrails), Sauté Lamb and other pork dishes. The Red Eggplant from Rotonda, the White bean from Rotonda, and the Sarconi Bean are some of this region’s DOP and IGP we can find in starters and entrées. Basilicata produces also good cheese like Caciocavallo and Pecorino, Canestrato di Moliterno and Pecorino di Filiano.
