In a small Langhe side valley, in Monforte d’Alba, we find a company careful about the environment with a history that goes back to the beginning of the 1900s. They can boast photovoltaics, a low-energy wine cellar, the use of small tractors, no synthetic treatments, hand harvesting, stainless steel and concrete tanks, and fermentation in large and small barrels. Local Chef Matteo Morra is a young man who will lead you into the ways of traditional cooking, focussing on simplicity, the research of the perfect ingredients, starting from scratch, and the rescue of almost forgotten recipes.
