Midway, between the high and low valley, 1050 meters high, in the heart of Gerola Alta, we find the Historical Bitto Center where the best rounds age in the casèra up to 10 years. The historical cheese fom the Bitto Valleys is produced exclusively during summer pasture months. Officine Turistiche offers you the possibility of getting to know this cheese of thousand-year old origins by visiting the museum, the aging cellars stacked with rounds, participating to a vertical Bitto tasting and savoring a lunch based on local traditions.

The Consorzio Salvaguardia Bitto Storico (a Historical Bitto preservation union) brings together 12 cheesemakers who continue the legacy: each union member is committed to maintaining a number of traditional mountain pasture practices and bringing summer production to the Gerola Alta Center. In the natural cellars of the Bitto Center, there takes place ripening and selection to ensure excellence. The union’s aim is to preserve the heritage of the land, techniques, knowledge and natural practices handed down through generations. Food is no longer mere pleasure; when produced with respect to land and tradition, it becomes agricultural action (C.Petrini)
