Umbria Typical products

Umbria cooking is peasant cooking. It entirely relies on products of the land. Ingredients are select, as for example Black Truffles from Norcia and White Truffles from the Tiberina Valley. For starters we like Ciauscolo from Visso, Prosciutto from Norcia, Capocollo, Sausages from Spoleto, Truffle Toast. As first course, Spaghetti Norcia Style, Imbrecciata from Gubbio, Ciriole Terni Style, Truffle Risotto, Broth Cappelletti, Tagliolini and Tagliatelle are all typical dishes. Main dishes lean on Wild game, Rabbits,Hhares, Pheasants, on white meats such as Chicken and Rabbit and fresh water fish, such as Carps, Trouts, Pikes and Tenches. Truffles, present in many of this region’s typical dishes, is also used to flavour cheese, as in the Pecorino Tartufato. Desserts: Cake from Orvieto, Pinoccate, Ciaccia Dolce and Pan Nociato.

Between 2010 and 2012 he earns a Travel Agency Technical Director title, a Sommelier diploma with AIS and a Cheese Taster title with ONAF. Through Officine Turistiche, a website offering environmentally friendly wine-and-food itineraries, he also offers photo shooting, websites design, and event management.
